Breakfast is Outstanding

Friendly staff arrive at your table bearing coffee cake to tide you over until your order arrives. You can bring your own coffee mug without recriminations. And the food - well, you may take some dishes for granted if you haven't ever tried cooking them yourself. Take the eggs - softly scrambled, seasoned well...they make perfection look easy! Inventiveness in the kitchen translates to artfully prepared rifts on chiles rellenos - stuffed with eggs and sausages and ham. The side potatoes are a work of art delicately layered with white cheddar. Even though we drove across town (worth the trip) to try this recommended restaurant, we'll happily return, for we've only just begun to mine the wonders on the menu!

Cons: you're outstanding if tables are full - no waiting area

I have been to Gaia twice and loved my experience both times. The roast chicken sandwich with bacon, brie and apple butter on ciabatta is absolutely amazing and probably the best sandwich I have ever had. This place is so cute and really makes use of local ingredients. They have the knack for pairing interesting things together in a simple way. The wait can be long, but I think it is worth it. I have never had a problem with the wait staff like other viewers have. They have all been very friendly. I will continue to go!

Gaia Bistro is tucked off the street in an old victorian house that has been converted into a special restaurant, set in the middle of the garden that procuces a large percentage of the restaurants produce during peak season. I love this place for its dedication to the local only fresh produce meats, dairy and as you read through the incredibly deverse menu (For a breafast and lunch place) you realize that the dedication to tasty affordable food is real here. The coffe is the best you will find in Denver and the patio dinning makes me feel like I am in Paris at a streetside cafe.The service is freindly, fast and you feel like they want you to be there. Check out the monthly wine dinners - OMG they are incredible.

Pros: Exellent Food and Service, The place is so good.
